Atkins....its actually what I started yesterday. Maybe I have to give it another try. The only way I could eat it as a kid was with my dad's cheese sauce on it. Hmmmm we'll see.

I've also used it as 'mashed potatos' for friends who were on high protein low carb diets (what was that called again?)

I also like it fried (we use matzoh meal as the breading). mmmmmm :)

I like cauliflower steamed so it's still firm and has a bit of a snap. I toss it w/Italian salad dressing . It's even better if it sits overnight in the fridge.

This recipe has it listed as a "dry" curry, and they make it with tomatoes. I've only ever had it the way I described it below, but then again, i almost always go to the same great restaurant for Indian curries...

There is an Indian dish called "Allu Gobi" (sp?) where cauliflower is simmered with peas, few sweet onions, and lots of deliciously creamy masala curry sauce. It's DIVINE, and the cauliflower soaks up so much of the flavor and moisture that it just falls apart in your mouth. I highly reccomend it! Plus if you make it with skim milk rather than cream, it's much healthier than eating it with cheese...

It's delish! Yup, it's bland, but has great texture so I throw it in all sorts of saucy/stewy things like marinara. And there's just something amazing about the cauliflower/curry combination.

I like it raw with dip, as an appetizer. Also, my prefered way for most all veggies - steamed with butter and salt. Mashed to sub for potatoes as per South Beach diet is more trouble than just eating it in chunks, but my honey prefers it that way.
My no-no veggie is brussel sprouts. *gag* Oddly, in the same family as cauliflower and broccoli, and I'm totally ok with them.

I love cauliflower and I'm growing it. Just steam it and then right before you take it off, put some shredded cheddar cheese over it. Yum. Also, you can add it to mashed potatoes to offset some of the carbs.
