New Year's Resolutions...

Mine this year are to stop drinking soda (and cut waaaaay back on other sugary drinks) and use my slow cooker more often. For the most part, I do eat pretty healthy, but damn, soda is addictive. Its probably the worst thing I do to myself, so am planning on cutting it out. I have to have stuff to replace it, though, I do get thirsty a lot. Am going to drink more lemonade/limeade as they are mild diuretics and seem to make my skin glowy, and ginseng and green tea w/ lemon slices. Am going to use stevia to sweeten all this (artificial sweeteners give me migraines FAST). I love sweet Southern tea, so am going to try it with stevia too.... also am going to try coconut water, never had it before, so if I like it am going to look for drinks I can make with it. Also need to find some sort of sippy cup/ thermos thing that isnt lame to carry around lol...

What are your New Year's resolutions, as far as healthier (and lazy lol) eating/drinking goes?

Happy Holidays!

I'm going to keep looking for healthy crock pot recipes...and making sauces without spice packages...I actually make a good ranch dip and onion dip from scratch - yes they take 5-10 minutes instead of 2-3 minutes. But really, 10 minutes is not a big issue.

Whatever you do to celebrate (if you do) this time of year, enjoy!

        Okay

        Ranch Dip:
1/2 Cup Mayo (I use low fat)
1/2 Cup Sour Cream (again I choose low fat )
        2 scallions sliced
        2 heaping tsp minced garlic
1-2 TBSP white vinegar ( I like 2, the husband likes it with a little less)
        2 TBSP Mnced/Snipped Chives
2 TPSB minced/snipped flat leaf parsley..

Mix together. Let set. Overight is best but a few hours will work.

Onion Dip (adapted from a Rachel Ray recipe)
        1 TBSP EVOO
        1 TBSP Butter
        2 medium onions, thinly sliced
1 beef broth cube or 1 packet salt free broth mix
        1/2 Cup water
        2 tsp worcestershire sauce
ground pepper to taste (1/2 tsp?)
        2 Cups sourcream

Put a medium sized saucepa over medium high heat and add oil and butter. Melt and add onions and garlic. Cook, 10 minutes, stirring occasionally. Add boullion cube and water and cook until it coats the onions stirring frequently, about three minutres. Season with worcestershire and ground pepper. Remove from heat and cool. Put onion mixture and sour cream in food processor and puree.

I learned to make these when I was cooking for my mom when she was on dialysis (hence the reference to salt free broth mix).

I make the simplest, most delicious onion dip from scratch. Just chop and seriously carmelize some sweet onions (like Mayan or Vidalia) in a little olive oil, season with salt and pepper, and stir into a small tub of greek yogurt. Also delicious with shallots, or a bit of each. Serve with sweet potato chips and you have a seriously addictive football snack you can almost feel good about!

Another yogurt-based favorite dip of mine is to toast and grind a few teaspoons of whole cumin seeds and add to Greek yogurt with one finely chopped chipotle in adobo and some chopped cilantro. Amazing w/ blue corn chips or raw jicama slices.

My resolution is to mostly break the lazy. Food? Great, no problem. I just need to not be quite so lazy.

Which basically means I need to exercise. Quick foods can still be called lazy without encroaching on exercise time.
