Tue, April 12, 2005 - 1:56 AMI like to dry toast in the pan I will use my one cup of quinoa prior to adding my two cups of water. Bring the water to a boiled and then turn it down to a simmer. I like to add thinly chopped ginger and roll it up in nori yummy very good for you! -

Tue, April 12, 2005 - 5:44 AMi like to cook it with mushroom broth and add a few dried, cut-up apricots to the broth. Then when the quinoa cooks, the apricots plump up. Then add some olive oil, salt, pine nuts, parsley... -

Tue, April 12, 2005 - 11:12 AMYeah yeah! Warm wintery-ish quinoa recipe: cook some quinoa, and then stir-fry some veggies; I like to use zucchini, mushrooms, onion, garlic, you know, the use. But here you are going to add in some cheese, swiss or smoked gouda or something pungent and stir-fry that in, and also a couple veggie sausages, cut up, and stir-fry that in, too. It's good to cook the snausages separately, because then you can just throw 'em in and not overcook veggies. Add some black pepper, a little sage, a teench oregano, and a bit of soy sauce. Throw the quinoa on top of that and stir fry for a minute so it's blended in. I like to have it with a yam on the side, drenched in butter. I don't know if that-all is healthy, but it sure is good.

1 1/2 cups quinoa
2 cups water
1/2 tsp salt
4 Tbsp olive oil
2 cups finely chopped leeks (white and pale parts only)
1/4 vegetable broth (substituting chicken broth is optional)
6 - 10 cherry tomatoes, chopped
2-3 cloves garlic
3 Tbsps basil, chopped
1 Tbsp lemon juice
1/2 cup grated romano cheese (optional)
Rinse quinoa in a strainer under cold running water until water runs clear; drain. Mix quinoa, 2 cups water, and salt in medium-sized pot. Bring to boil. Reduce heat to medium-low, cover, and simmer until quinoa is just tender and almost all water is absorbed, about 20 minutes. Drain. Set aside. (Quinoa can be made 1 day ahead. Cool, then cover; chill.)
Melt 1 Tbsp oin in large nonstick skillet over medium heat. Add leeks; saute until beginning to soften, about 5 minutes. Add garlic and saute for another minute. Add broth. Cover; simmer until leeks are tender, about 5 minutes. Add quinoa and remaining oil; stir until heated through; about 5 minutes. Stir in tomatoes, basil, grated cheese and lemon juice. Season to taste with salt and pepper. (Source: Organic Express) -

Fri, April 15, 2005 - 6:00 AMI like to eat quinoa for breakfast. You can eat it hot like oatmeal or cold like cereal with milk.
Try adding any of the following:
berries
yogurt
honey
nuts
applesauce
cinnamon
yum
