do you make any unique bean dishes, thinking outside the box kinds of recipes??

    one is a salad: bean mix (or chickpeas) with chopped tomatoes, lots of parsley, and olive oil. i think that's it!? :D

      just made this last night for a party at work today...

      Black Bean, Corn, & Cucumber Salad

      1 English cucumber, peeled and diced
      1 15oz can black beans, drained and rinsed
      1 15oz can corn , drained and rinsed
      1/2 cup diced red onion
      1 small jalapeno, seeded and chopped fine
      juice of two limes
      1 tsp minced garlic
      1/2 tsp cumin
      chopped fresh cilantro leaves to taste
      salt and pepper to taste

      Mix it all together. That's about it :). Works as a side dish, salsa...whatever.

    I mostly cook on the fly. I don't like beans being the main ingredient for simple digestive reasons, but add them in places that seem to more obscure in modern cooking. For example, I made a borscht last week with some garbanzos tossed in. I do a lot of sauteed veggies with a side of kashi or other grain, and will toss some beans into the veggie mix. Just enough for texture enhancement. I like edamame and soba, but I don't consider that too out of the box.

    Sweet Potato Kale Soup
    4 onnces of fresh kale or any dark leafy green you like.
    i large onion chopped
    3 teas. italian seasoning
    2 tab. olive oil 3 cans of vegetabl broth 2 cans white kidney or cannellini beans 1 pound peeled and cubed sweet potatoes
    12 cloves garlic minced
    1/2 tea. salt
    1/4 tea. pepper

    Cut out and discard the thick vein from the kale leaves
    saute garlic, onions and italian seasonings in olive oil until onion is tender
    Add all the rest of the ingrediants bring to a boil reduce heat and simmer uncovered for 20 to 25 minutes.

    This is very very yummy and don't be afraid of all the garlic it makes it great.
