I just made this yesterday, and it took me about 15 minutes of sauteeing, and then dump, blend, and simmer! EASY!!
Get hot in pan:
3Tbsp Olive oil, or butter, or whatever fat you have on hand (I don't doubt bacon fat would be even better)
Add:
Trader Joes Mirepoix pre-cut veggie mix.
Seasonings - mix and match - whatever you've got - basil, oregano, cumin, paprika, cayenne, salt, pepper, etc!!
Sautee 6-7 minutes.
Add:
1lb ground turkey
Cook thoroughly, breaking up turkey into small pieces by stirring. (~6-7 minutes)
Add:
two packages of 1lb of pre-cooked**** lentils (trader joes)
1 quart stock (veggie, chicken, beef, whatever)
1 large bottle marinara sauce (I used a tomato and mushroom sauce, but anything works....chunky is good, as you will puree anyway)
Use:
Stick Mixer to blend to your desired consistency. I actually blended up one of the packages of lentils separately, and added it to the soup, so my soup was a bit chunkier, but if you don't want to dirty another bowl, just mix it all up!
Simmer 15-20 minutes. EAT! (and store - because this is a LOT of soup/stew!!!) I will be fed for a WEEK off this! It's SOOOO yummy, and a little bit spicy! I put a dollop of sour cream and mixed it in, and made it a little creamy. *yummmmmy*
****If you can't find pre-cooked lentils, you will just need to simmer about twice as long - they are quick cooking, so it's not a big deal.
