This is one of my absolute favorites, and easily a meal on its own. Take a can of chunk chicken, some pasta cooled to nearly room temperature, and LOTS of baby salad greens. (I mean tons.) Add some mayonnaise, mix and enjoy. It is so good!

Thu, September 10, 2009 - 8:55 PMI can't eat lettuce or spinach due to the coumadin. I could if I eat regularly. But I dont eat regularly so just avoid anything with vitamin K. But I still make salads without lettuce. Some people at work have loved my creations and started making them too. Basically I get veggies really cheap at the Indian market in Dublin. So I get green, red, orange & yellow bell peppers. Tomatoes. Cucumber. Sometimes some red onion or mushrooms. I use croutons sometimes. But normally I put those crunchy chow mein noodles on top. I sometimes put chicken also. And use any dressing. I usually use one of these three which are my faves.

bit of salt n pepper, and pad or two of butter, nutritional yeast, tumeric
fresh chopped mild white onions, black olives, sweet diced tomatoes, cilantro, parsley
a couple tablespoons pesto optional.
fluff up the cous cous, and season with some nice sea salt, the pepper and a dusting of tumeric and yeast.
add all the chopped veggies on the top, with a tad o pesto
great with bacon on the top....mmmm -

Mon, September 14, 2009 - 12:39 AMthose are nice grills, and they are fast too. i still like to use a bit of water, so really get all that grease out. But the foreman grills are a huge difference in content. And for a bachelor like myself, the little one is fast and easy to clean.

Fri, September 11, 2009 - 1:57 PMSweet P, I add some salt, that's all. After you've added as many greens as your serving bowl will hold, and the mayo. The greens will mush down a lot. I just keep adding them and mixing until no more will take the mayo. It's really, really good--doesn't need any other seasonings besides a little salt, and maybe some pepper, if you like. -

Sat, September 12, 2009 - 12:00 AM'just before done', so when i pour off the water, i still sizzle and dry it if i want it that way. personally, i don't like crispy bacon. i cut it in bits.
i do the same with hamburgers too. cook them, then add some water and pour off that grease. only thing i don't do it with, is chicken. -

Tue, September 29, 2009 - 5:31 PMbest way to cook the fat off bacon is to trim it first, then bake it on a wire rack above a drip pan. Crisp and lean that way. Isn't anyone watching the food channel these days? -

I like baby spinach, thinely sliced sweet onion,raw mushrooms, carrot shreds, a hard boiled egg and sometimes the bacon pieces but not always. With a l;ittle ranch dressing, yum and to boost the fiber some white beans sometimes called white kidney beans.
