Greetings! I plan to attend a barter fair or quite a few,
and would like to sell some cookies and other special things.
Do you all have any great ideas
for goodies to bring to the fair?

In my opinion, you can't go wrong with lemon. Especially outdoors when it's warm. Lemon seems refreshing. If you have a good lemon thingy recipe.

Lemon Drizzle Cake is an amazing lemony thing to make!

I'd make one chocolate thing, you can never really go wrong with that - maybe some double choc chip muffins?

What about some kind of summer berry cheesecake, they're always very good for nice sunny days? :)

consider the temperatures where you'll be outdoors, and the perish-ability of the good you want to bring. If you don't have refrigeration, DON'T do cheesecake. Chocolate chips will be melty enough.
