Soup always freezes pretty well... do you have a freezer ?

Snacks are easy.. look to mother nature - fruit !

I go for hummus and guacamole. A little tub of either gets me through the week. Fruit is great... but sometimes you just want some carbs and fat slathered on bread.

I haven't been on this site in forever--dunno if you're still looking for ideas. I have a lot of freezer space, so, when I make something, I often make at least double and freeze the extra for future use. This doesn't work well with things containing potatoes, though, as they get mushy.) I do soups, stews, casseroles, anything that can be made in quantity. Lasagna, enchiladas, tuna casserole, chicken a la king--all good choices.
