I'm planning a party for about 50 people. I'm gonna have appetizers and a friend is supplying the wine. Thinking a fruit tray, a veggie tray and crackers with a bunch of different dips. Any great recipes out there? Also thinking **budget**

Tue, April 1, 2008 - 4:48 PMHahahaaa! I was about to post that! My menu is at the bottom of the list and I spent about $100 for all of that. If you don't have as much to spend then you can substitute cheaper ingredients - salami or ham instead of proscuitto, etc... I think one of the most expensive dishes was the caprese on a stick (good mozzarella balls are spendy!) but you can buy cheaper mozzarella, marinate it yourself, and cut into chunks for less $$$. Cornbread was the absolute cheapest (jiffy brand) and who doesn't like cornbread? -

Tue, April 1, 2008 - 4:54 PMI should have prefaced more clearly that the meat was high quality (between $10 - 13/lb) and the budget included party platters/plates I got at target and crate and barrel after x-mas sales. $2 for a party platter! And $2 for 5 reusable dinner plates! -

Black Bean Salsa Yield: About 3 cups
2 cups canned black beans, rinsed and drained
1 cup cherry tomatoes coarsely chopped
3 cloves garlic, minced
2-6 tablespoons fresh, chopped cilantro
2 jalapeno peppers, stemmed and minced
3 scallions, white and green parts, thinly sliced
2 teaspoon ground cumin (more or less)
2 teaspoon chili powder (more or less)
1 tablespoon olive oil
1 1/2 teaspoons red wine vinegar
juice of 1 fresh lime to taste/consistency
Salt and black pepper to taste
Lemon pepper salt to taste
Combine all the ingredients except the salt and pepper in a large bowl. Stir gently. Season to taste with salt and pepper. Cover and refrigerate for at least 2 hours or until well chilled.

Spiced Dal - sorta from the Vegetarian Epicure
2 cups moog, urhad dal or yellow split peas
water
2 cups broth (chicken, turkey, veg.)
1 1/2 teaspoon salt
4-5 tablespoons butter or ghee
1 teaspoon cumin seed
2 teaspoons coriander
2 teaspoons turmeric
1/2 teaspoon cayenne pepper
2 teaspoons ground ginger
2 teaspoons dry mustard
6 cloves
Wash dal, put in saucepan and cover with water, bring to boil, rinse off foam. Repeat 2 or 3 times. For last boil, use broth and water to cover, and cook till beans are soft. Set aside.
Heat butter in saucepan, add spices, stir well. Remove from heat.
Add beans to butter and spices, stir well. Cook on low heat, stirring often, adding water and more butter if necessary to consistency of very thick soup. Let cool on stove, increase seasonings as needed. -

Tue, April 1, 2008 - 7:11 PMI did a party a few years ago where my guest that was suppose to bring the apps forgot. I busted out some tortillas and made a bunch of quesadillas. I did some with plain cheese, other's w/ cheese and salsa, chopped up deli ham and turkey, etc.
My huband is Argentine and it seems like all of the women make ham and cheese sandwiches on crossiants that are then heated up and cut in half. Best place to buy ingredients is at a Costco or BJ's.
Oh! Taco Wheel.
2 can Refrigerated crescent rolls
1 pounds Ground meat, turkey or chopped up chicken breasts.
1 pack Taco seasoning mix according to directions My fave is the Chipolte mix from Ortega.
1 cup Sour cream
8 ounce Cheddar cheese
½ cup Black olives; sliced
1 Bell pepper; (sits flat)
1 cup Mild salsa
Cook meat, drain, add taco seasoning and cook until liquid is absorbed. Add cheese. Arrange crescent rolls on a flat baking stone in a circle with bases overlapping in center and points to the outside - (unroll the crescent rolls and place the pointed triangle part on the stone overlapping each one) Spoon meat around in a circle and pull the square part of the crescent rolls over the meat, sealing it to look like a wreath. Bake at 375 for 20-25 minutes or until golden brown.
Take everything listed from sour cream on down and put in bowls for guest to dress up as they like.
This dish is AWESOME from a lot of stand points. You can sub your fave broccoli and chicken mixture or anything you can think of for the filling for that matter. But my fave part is that the day before the party you can cook up the meat and throw it in the fridge. Assemble and throw in oven as your guests start to arrive. And its pretty cheap for the most part. -

Tapenade's pretty easy, and olives are pretty cheap.
For cheap dippers, a bag of masa is a couple of bucks, add some water and make a ton of tortillas (plus it's gluten-free). -

satay sticks, veg/meat kebabs. easy to use as finger food.
also make your sausage rolls by cutting up filo pastry and rolling diagonally around small sausages (chipolatas). Just cook in oven and eat hot or cold. -

Fri, April 4, 2008 - 2:05 PMI found these at "about.com" only I used dry garbonzos(re-hydrated then cooked) I had to use a little xtra olive oil then called for in the recipes. Both were great but, I LOVE Kalamata olives and I found out that alot of people don't care for them as much so I got to eat ALOT of the Kalamata version :-)
Regular Hummus:
1 16 oz can of chickpeas or garbanzo beans
1/4 cup liquid from can of chickpeas
3-5 tablespoons lemon juice (depending on taste)
1 1/2 tablespoons tahini
2 cloves garlic, crushed
1/2 teaspoon salt
2 tablespoons olive oil
1/4 tsp ground cumin
PREPARATION:
Drain chickpeas and set aside liquid from can. Combine remaining ingredients
in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5
minutes on low until thoroughly mixed and smooth
Kalamata Olive Hummus
1 can garbanzo beans/chickpeas (15 oz) drained
1/2 cup kalamata olives
1/3 cup tahini
2 tablespoons olive oil
3 tablespoons lemon juice
1/2 teaspoon red pepper flakes
1/4 teaspoon cumin
PREPARATION:
In a food processor, combine all ingredients and blend into a creamy, smooth dip.
If dip is too thick, add 1 tablespoon of water, until desired consistency.
Kalamata olive hummus can be made up to two days in advance
Store in an airtight container in the refrigerator.
Kalamata olive hummus can be served hot or cold and with pita bread, pita chips,
or veggies.

Fri, April 4, 2008 - 2:21 PMthere's a lot of ways to make hummus, and many of them are quite tasty. I try to keep the fat and salt down, by either soaking and boiling dry garbanzos(rinsing between boils gets rid of the gas). If I get canned, I rinse away all the briney liquor. Often, I'll have de-fatted my tahini with paper towel (takes a few days). I put 2-3 cans worth of garbanzos in the food processor, with half a head of garlic (peeled and smashed a bit), and let it grind to a crummy mess. Then, I add a few tablespoons of tahini, juice of half a lemon(more if you like), and a teaspoon-tablespoon of turmeric, chili powder, Spike or sea salt, a dash of cayenne. Curry powder also works well. Add water and more tahini till it gets close to desired consistency, almost never olive oil. Then I throw in a half-cup or cup of fresh curly parsley, and process again till it's right. Garnish with olives, serve with pita, chips or crudite.
Very little fat and very very flavorful.

spinach and bleu cheese dip - I use the cook's illustrated recipe, but found there was too much parsley last time so will use 1/2 the amount and I'm omitting bacon for the veggie friends
jade hummus - someone posted the recipe here, it's "hummus" with edamame instead of garbanzo
coleslaw
baked beans - in the crockpot. with bacon (meat counter was closed so i couldn't get hamhock). my first time making this, hope it turns out! been soaking beans since last night
scotch eggs - hard boiled eggs wrapped in banger sausage, breaded and deep fried served with sweet hot mustard (all from scratch). not for the faint of heart
for the main course we've got a keg and beer butt chicken. can't wait for tomorrow! -

Yogurt, apple cider vinegar, salt, pepper, onion powder, garlic powder, and cabbage - toss and let it sit for at least an hour. Portions vary depending on consistency and flavor. My sister makes a japanese style one with rice vinegar, nothing creamy, and I think there's sesame and green onions - I can't remember...

Fri, April 4, 2008 - 5:03 PMSliced ham wrapped around cantaloupe slices is good, with a toothpick through it to keep the ham from sliding off. Also, little salads on a stick: basil leaf, piece of mozzarella, and a grape or cherry tomato. Put a little olive oil on it for flavor.
