i bought a whole bunch of yummy fresh produce, and have a drawer full of spices, and am seeking your favorite FAVORITE spice/sauce mixtures to stir fry them in. :-) oh yeah, i also bought whole tamarinds, but don't know how to cook with them. thanks!

a dash of fish sauce
for chicken:
thicken Swanson's chicken broth with cornstarch add:
ginger, garlic, sesame oil, dash of oyster sauce. I save the soy for the table if it's needed but I feel it overpowers the chicken.

garlic to taste - I like a lot
ginger, ginger, ginger
black pepper
dash salt
soy sauce
touch of honey if you want more sweetness
little water if it's too thick
hot pepper to taste
Let it all sit together for a while to mix the flavors well. Then cook it for a bit in the stir fry. Add some cornstarch to thicken.

Mon, April 7, 2008 - 10:05 AMTake the tamarind out of the pod and soak in warm water (you can use a small pot on low). There are seeds to as it dissolves remove them. You'll dissolve the gooey tamarind into a paste (or a "sauce" depending on how much water you use). Tamarind is the base for sweet and sour soups (thai and Vietnamese) as well as pad thai. -

Mon, April 7, 2008 - 11:55 AM"five spice", soy, fresh garlic & ginger, sesame oil, fish sauce(sparingly), red chili's, brown/white sugar, cooking sherry and you are pretty much good to go. Most, if not all of these in combination, sometimes more sometimes less( to taste),
I like to use Hoisin sauce or Teriyaki as well but they only work with certain types of stir-fry.
In my very humble opinion of course :-)
I am unfamiliar with Tamarind, I hear they are quite "unique"!
