what do you do with Quinoa?
New best breakfast in the world is, sautee garlic and yellow zucchini, i think in oo, maybe butter, then add *Soyrizo and cut up serrano chilie salt and pepper, add cooked quinoa, stir and then add eggs and scramble it into the quinoa yummy~ness..serve with avacado and a hot tortilla, red chile sauce if you have it...... my honey makes this everyday and it is so good for you and taste amazing!! Enjoy!

Fri, November 12, 2004 - 11:38 AMreally i love it....its' a grain well not a true grain, but it's similar to buckwheat or amaranth..it's like a puffy wheat rice, with little tails on it, my dauther calls it fairy rice...it's great in veggie soup too! -

that might be because you didn't rinse it well enough before you cooked it. make sure to rinse it very well before cooking, and it gets rid of the bitter smell/taste.

Sat, November 13, 2004 - 1:49 AMI love quinoa. Seeds of Change makes organic quinoa mixes, with rice and millet and yummy flavorings like "zesty cilantro". I like it as a side dish with fish, or just with some steamed veggies. Sometimes a little cheese if I'm feeling crazy. Cold leftover it's great on salad. And always good in soups.

Sat, November 13, 2004 - 7:41 AMMy current favorite is to put coarsely ground quinoa in a bowl, mix in enough water, a tablespoon of olive oil, salt, spices and herbs (try sage), and nuke that for about 5 minutes in a microwave oven. Extremely lazy and deliciously creamy. -

I've always loved cream of rice - this "cream of quinoa" sounds like a winner. thanks for the awesome idea!

Sat, November 13, 2004 - 12:05 PMI *heart* quinoa. When I want a good, simple hippie-style meal, I mound steamed broccoli and marinated, pan-fried tempeh on top of quinoa and dress it with homemade peanut sauce. Yum!

Sun, November 14, 2004 - 6:48 PMI cook quinoa and sometimes add some finely chopped veggies...I then steam a few collard green leaves and wrap up the quinoa mixture like a burrito or sushi...this for me has been the best way to eat it and get in my veggies too.. -

Nutritionally, quinoa might be considered a supergrain--although it is not really a grain, but the seed of a leafy plant that's distantly related to spinach. Quinoa has excellent reserves of protein, and unlike other grains, is not missing the amino aicd lysine, so the protein is more complete (a trait it shares with other "non-true" grains such as buckwheat and amaranth). The World Health Organization has rated the quality of protein in quinoa at least equivalent to that in milk. Quinoa offers more iron than other grains and contains high levels of potassium and riboflavin, as well as other B vitamins: B6, niacin, and thiamin. It is also a good source of magnesium, zinc, copper, and manganese, and has some folate (folic acid).
Eat it up!!! That breakfast sounds great, by the way. Can I borrow your sweety? Mine likes to eat Cap'n Crunch for breakfast :-b -

Fri, December 3, 2004 - 9:23 AMyou've got to sneak in healthy food slowly on a sugar cereal type. i've got mine eating spinach and some soy based products, but it's a gradual progression. if you're trying out a new recipe, it might be good to test it out on friends, so he doesn't permanently dislike a food. -

cook quinoa as directed, then shred beets into it.
either just like that, or add ghee and/or sea salt and/or braggs amino acids or even soy sauce.
yum.

I cook Quinoa like rice but I always use stock instead of water. It has a great texture. I love to add it to soup or use it like rice in a main dish. -

It is great (has a nutty flavor) and if you put in a few dried apricots when you start cooking it (I use mushroom broth) they plump up in the dish and add a really nice mild sweetness!

Wed, January 12, 2005 - 3:48 PMAfter this thread started running, I bought some Quinoa, and added it to some leftover smashed beans. Added a dash of hot sauce, grated some cheese pver the top & it was sort of like chili.
It was definately a good use of leftovers.... -

1 large egg
2 egg whites
3 cups cooked quinoa
(see Basic Quinoa)
2 cups peeled, grated sweet potato
(about 1 medium)
2 bunches scallions (white and light
green parts), thinly sliced (1 cup)
1 large bunch cilantro, finely chopped
(1 cup)
1/2 cup quinoa flour
2 tsp. coarse salt
1/2 tsp. freshly ground black pepper
Vegetable oil for frying
Lime wedges for garnish
Preheat oven to 200 [degrees] F. In large bowl, lightly beat egg and egg whites. Add quinoa, sweet potato, scallions, cilantro, quinoa flour, salt and pepper and mix well. Let stand 15 minutes.
In large skillet, heat 2 teaspoons vegetable oil over medium-high heat until hot but not smoking. Cook cakes in batches, using about 1/4 cup of quinoa mixture for each cake and flattening slightly with back of spoon to form a 3-inch disk. Cook until golden brown, about 3 minutes per side, reducing heat if cakes brown too quickly.
Drain on paper towels and keep warm in oven. Repeat with remaining cakes, adding more oil to pan as needed. Serve hot with lime wedges to squeeze over cakes.
