heat oven to about 200C
halve tomatoes and place them cut side up in a baking dish
cover with any or all of these: fresh or dried herbs - parsley, rosemary, basil, chives, bread crumbs, salt and pepper, grated parmesan.. and finally drizzle olive oil over the top
and bake for about 25 minutes
(allow to cool for a few minutes before eating they're mighty hot)

Wed, October 7, 2009 - 9:25 AMIf you have a LOT of tomatoes, you can oven dry them.... cut in half, sprinkle with a little salt & pepper, lay on a cookie sheet, roast about 4-6 hours in 200-225degree oven. They keep really well in the freezer, and make the most delicious sauce.
To get the flavor faster...roast a can of whole peeled tomatoes (with the juice) at about 350 - 375 for an hour. -
