It got ate. It lasted 12 days before it was all gone. Didn't start going bad. But was kept in the fridge 90% of the time. Only came out long enough for me to put some in a serving thing of some sort. So any bacteria didn't go into the whole batch, it went into the small amount that was being eaten.

Hummus has a very brief shelf life, mostly because of the dipping... spreading more bacteria even without double-dipping, all those fingers in the bowl. I rarely have leftover hummus, but I don't trust it after 3 days.

I didn't use any olive oil. I cooked my garlic in grapeseed oil. My recipe (quick and sleazy) had me use reserved liquid from the can as moisture. I also felt it needed a little more *something* so I put in a little soy sauce.

But I found out last night that if you're tired of veggies and don't have pitas, a heated/toasted flour tortilla is pretty good with hummus.

garlic is a natural perservative, so I think it'll last longer then you think.

but... I'd guess a 7 to 10 days. freezing is a very good option...

There's only 2 of us at my house, and my husband isn't very… adventurous. I got him to try it, but I don't know if he'll actually *eat* any of it. That's the main reason I'm wondering. A lot of times if I'm on my own to eat something, it goes bad before it's all gone.

It wasn't freshly made, but a friend brought over a sampler platter of hummus for a party we had and most of it was left over. The party was a week ago from last Saturday and we just finished it off last night. It tasted fine until the end (so that's about 9 days). It probably would have been fine for another day or so. But again, this was store bought to it might have had stabilizers in it...
