This thread was so intriguing. I just made up the following:
oatmeal
butter (just a bit)
some shredded sharp cheddar cheese
salt & black pepper
Hot Salt (my addiction)
It's very tasty - odd, but tasty.

Here's a simple one I got out of a Zone cookbook:
Cook one serving of oatmeal (instant or the hard way)
Add 1-2 Tbl cottage cheese
Add 1 Tbl slivered almonds
Sprinkle liberally with cinnamon
Stir it all together and then zap in the microwave for about 15 seconds. Not exacly what I'd call "savory", but it's quick, balanced, and Very Good! :)

I'll bet the risotto recipe would work great with whole oats (i.e. not rolled, but the actual seed). And I'll bet the polenta recipe would be fantastic with steel cut oats!

Interesting idea, savory oatmeal. D'ya think it would work to substitute oatmeal for rice in a risotto recipe, or cornmeal in a polenta recipe?

It was pretty good ... minimal cooking time and pretty healthy!

1 cup oats [uncooked]
1 3/4 cups water
1 red bell pepper [chopped]
1 medium onion [chopped]
A handful of fresh spinach leaves [chopped]
A handful of cilantro leaves [chopped finely]
1 jalapeno pepper [chopped finely]
A small piece of fresh ginger root [peeled and grated]
1 medium tomato [chopped coarsely]
2 tablespoons Extra Virgin Olive Oil [to sautee]
1 teaspoon cayenne pepper
1/2 teaspoon coriander powder
A dash of salt [to taste]

Heat olive oil in a saucepan and sautee the ginger root, chili pepper, onion, and bell pepper. When the onions turn golden brown, add the salt, cayenne pepper, and coriander powder. Add the chopped tomatoes and let it sautee for about a minute. Add the oatmeal and water and cook until the water evaporates and the oatmeal has a thick consistency [couple minutes]. Throw in the spinach leaves and allow them to wilt from the heat. Adjust seasonings to your preference. Serve hot.

Oatmeal is in some way much like rice, great to experiment and almost everything works with it.

Oatmeal and fruit!
Oatmeal and any variety of seasonings
Oatmeal with gravy, replacing mashed potatoes.
Oatmeal and steamed veggies, yum!
Oatmeal added to chili!

Oatmeal has a good amount of fiber and oats also provide support for smooth nervous system functioning!

Well, traditionally grits are always served with savory flavours, so why not take a hint from that? Traditional ways to serve grits are with butter, with butter and cheese, especially sharper cheeses like cheddar, or with eggs and sausage.

Please do let us know what you try and how it was!

Oooohh.

You have stumbled onto a secret of mine.
Spicy oatmeal !

I rarely even eat it sweet anymore, except with yogurt-apples-nuts-honey-and lots of pumpkin pie spices.

Start with a hearty mix of grains/oats(not overcooked and sticky, loose and slightly dry )
Add a heaping spoon full of sour cream(veggie or dairy) or yogurt(goat milk preferred).
Reach for the spike or trader joes 21 salute.
Add cayenne or chili powder.
Boost with a hint of tabasco or siracha.
Dash of pepper.
Stand back....

It is a whole new world.
:o)

(p.s. I have experienced instant stuff from Japan that comes flavored with jalapeno, cheddar and broccoli . Not for everyone, but tasty if you like different textures in your mouth.)

I have to admit ... I crave savory/salt-based foods more than sweets.

Has anyone ever tried to spice up oatmeal? Its all I've got in the pantry this morning and I'm wondering whether to mess with a good thing. ;)
