I'm not lazy, I work very hard. Some days I don't realize its past 6pm until my stomach starts growling.

Fri, April 11, 2008 - 9:27 AMIn my experience, it all depends on how much you're willing to do ahead of time, or how much you're willing to buy canned or boxed food.
Take one day that you have more time, and peel and cut carrots into sticks and keep those in your fridge for quick snacks.
Cook a bunch of rice on a Sunday and separate into individual servings for the rest of the week. Now you can have rice any night for dinner and not have to wait for it to cook.
When you buy meat, you can go ahead and cut it and separate it into individual servings for whatever use before you put it in fridge. Then just remember to get it out of the freezer before you want to use it, give it time to thaw – or defrost in the microwave – and you're ready to cook.
Of course, most salads are ready to eat within 20 minutes… -

Fri, April 11, 2008 - 10:05 AMI grow my own lettuce, and this helps a lot with having salad. I can jsut go out back and pull off as few leaves as I want. Otherwise, I'd get a ginormous head of lettuce at the grocery store, and it would go bad before I could use it all. Also, store lettuce is not as tender and fresh as home-grown. It's surprisingly easy to grow lettuce in pots, and you can get some beautiful varieties. -

I learned the hard way that the local four-legged wildlife (and I don't mean the cute ones, like deer, I mean the nasty little ones with long tails) felt that my veg garden is their own private salad bar.
I'd *love* to grow something indoors, though!

Fri, April 11, 2008 - 10:34 AMI'mreally trying hard to work on my diet, mostly breakfast as I mentioned in my first post. Planning ahead is the only way to do it. I make my breakfast and lunch the night before and pack it for work - if I dont', it doesnt' get done and I end up eating crap or nothing.
In the past, homemakers would plan meals for the whole month, how they were going to use leftovers and everything! Can you imagine being that organized? But in the 40s with food rationing, I guess you had to make meat and dairy last and all, right down to the last pat of butter. -

Fri, April 11, 2008 - 12:36 PMWhen I was a student I used to make food on the weekends (when I had time!) to put in the fridge or freezer for quick weeknight meals. One of my favorite things to do was roll burritos. I'd take the time to buy lots of ingredients - beans, cheese, make some shredded beef or chicken, olives, salsa, sauteed mushrooms and onions, etc... - and roll a bunch and put them either in tupper ware or sammich bags. It was nice to just pop one in the microwave when I was hungry.
I often plan meals in advance, like roasting a chicken then using the carcass for broth and then making either cream of chicken soup (had that this week for lunch - yum!) or chicken and dumplings. Crockpot is another way for you to have a warm dinner. Just add the ingredients in the morning before leaving and when you get home you'll have dinner ready!

Fri, April 11, 2008 - 12:19 PMI try to keep a couple packages of pasta in the freezer (I get the refrigerated kind) and some veggies. The pasta is really quick cook, toss with a little olive oil & throw in some steamed veggies. Yum!

Get into Omlets for dinner. Quick, easy and uses what you have in the fridge.
If you have a sandwich maker you have endless possiblities for a short amount of time. I like to eat something hot for dinner usually though, so for me a pressed sandwich in the sandwich maker could be dinner, where a cold sandwich could "only" be for lunch.

Whole wheat couscous ..cooked in the microwave only takes 3 minutes
BASE
in a pan
heat olive oil (tablespoon or so)
couple cloves of garlic
add a can of drained black beans
can of diced tomatoes
diced onion if you have it
half a cup of salsa
Salt, pepper, cumin
ADD INS
a cup of one of the following
diced tofu
peeled shrimp (my favorite)
diced chicken breast
Serve over couscous sprinkle with a little cheese
all in all it takes about 10-15 minutes, you can even eat it burrito style and there is leftovers that can be easily packed for lunch the next day.
I always keep canned black beans and canned tomatoes around for quick meals -

great ideas, btw. i always try to keep some nuts &/or dried fruit around since i'm also the type to go a lot all day & not realize i'm hungry until i'm starving! munching here & there helps that moment [of hunger] seem a little less dramatic. -

And as far as being a bad cook, I'm really not. For some reason I just can't do rice. But I can make a great Hollandaise sauce from scratch (not healthy, but challenging) - you can put it ON healthy things - I usually make it for salmon and asparagus and cous cous - an easy meal that's impressive for company. -

salad nicoise is basically butter lettuce, tomatoes, tuna and hard boiled eggs...a quick and satisfying little supper!
though i'd probably make mine with romaine, as i like its crunchiness...
or there's that good old chicken caesar ...some bite sized chunks of roasted chicken on top of romaine with caesar dressing, a dash of fresh grated parmesan cheese, and some croutons. yum! -

Thu, April 17, 2008 - 10:24 PMkeep some pasta (or rice), frozen veggies, dried mushrooms and bouillon in stock. you can cut in some fresh veggies if you want.
put a pot of water to boil, throw some bouillon in it. put as much water as you like - i like mine to be like a soupy mix, so lots of water.
get everything else out while it heats up. throw the pasta in it, then when its past boil (if you care to watch the pot, otherwise it doesnt really matter) throw in the frozen veggies and shrooms. once the pasta's cooked let it simmer or of you're super lazy fk it. just eat the damn thing.
you get variety from putting in different veggies/whatever you can think of. takes less than 15 minutes from start to finish.

The other night I had just a bowl od frozen peas heated in the microwave, or you can out them in salads, weird but very good, they are also good in any type of pasta, which my love for pasta far exceeds even my love for frozen peas. I like to keep annie's white chedder mac and cheese and cook it up and add some frozen peas and a can of tuna, maybe some broccoli, (I recently learned about FROZEN broccoli, oh the wonders of freeze) So there you have it. or my favorite since I was a very small child, or forever, pasta peas and parmesan cheese!!! but then again, I AM a college student so maybe that is just too "collegiate" as everyone always mentions college eating as some horrible, sad to look back on unhealthy experience...but who's to say! hope maybe my rant may impress upon you the wonders of pasta and peas! -

and i second the peas in mac n cheese. it's divine.

Spring salad mix plus your favorite veggies, chopped eggs and cheese or tuna. Toss with Balsamic vinegar and EVOO. Ad a few basil leaves.
peanutbutter and a granny smith can tide you over until you can cook a slower meal.

Sun, April 20, 2008 - 2:02 AMI will have to agree w/ most when they say salad or pasta. Keep a bunch of chopped or frozen veggies on hand and you can make either or in minutes. It really helps if you chop up extra veggies and keep them in the fridge so that you can just throw them into whatever you are cooking. Take the time to wash and store your veggies and herbs when you come home from shopping and you will notice dinner come much quicker.
I always keep tomato sauce and garlic on hand for a quick sauce. Add some fresh basil and there you go.
I have a whole cookbook on 30 min meals and it really helps me out when I am searching for idea.
Lately I have been into making my own soups in under 30 min. Very good for the tummy and the soul! -

Stock up on those Uncle Bens already cooked rice pouches, I think there are about 8 different ones now, plus this week Publix has them, BOGO and there is also a coupon in this Sundays' paper for $1 off of 3 pouches...heat up the rice and add a can of black beans, or stop and get a baked chicken to go and add some cut up chicken.
Put the rice in a bowl and as it's heating up add some fresh veggies on top to steam.
I also will stop and get about 1/2 lb. of fried chicken tenders and make a huge salad with all kinds of fresh veggies, hard boiled eggs and the chicken.
Or do breakfast for dinner, waffles with fresh fruit, an omelette, sausage and gravy biscuts with fresh fruit. -

Sun, April 20, 2008 - 10:23 AMthe Tasty Bites brand has great indian and thai foods that are reheatable in their pouch in hot water...i think my favorite is the peas and paneer (it's an indian cheese) with rice. it's not too spicy, the rice is decent quality when cooked, and it makes a filling meal on its own for one, or with pita bread and a salad, it could make a meal for two. price is right, and the shelf life is long (good earthquake kit food!) -

I love the spinach and rice one. And you are so right, eat it with a salad or a piece of chicken and it's definitely enough for two people.
No one carries them where I'm living now so whenever I go to a Whole Foods (2.5 hours ) away I always buy at least $100 worth. -

Mon, April 21, 2008 - 11:28 AMTasty Bites are good and the frozen naan at Trader Joe's is surprisingly good too - we usually have 1 of each in the house for a quick meal. Tasty Bites (and TJ brand that is similar food) saved us when we worked on ship that had awful food. We didn't have access to a kitchen, but there was always hot water so we'd soak the bags in hot water to "cook" them. :D
