I am looking to make sugar free geletain with Stevia..
I figure I can used unflavored geletains and make my own... is there a concentrated Flavoring that will make a decent jello??

Mon, October 15, 2007 - 5:31 PMDo you want no sugar or no added sugar? The fact is when we eat fruit part of the taste is the sweet taste buds in our mouth getting stimulated.
One way to go would be to replace the water with concentrated fruit juice and a bit of flavor extract, not the same either, maybe vanilla or orange. You then could add the stevia to taste.
The other would be use the flavor extract or koolaid or whatever and then add the stevia to taste if you are avoiding all sugar. But then why not use jello mix where you add the sugar and replace it with the stevia? (some store brands are like that) Then the flavoring is all there for you.

Mon, October 15, 2007 - 6:45 PMI planned on using knox unfalavored gelatin... buit i DO want flavor... I just dont want Nutra sweet or spenda in it... and if its sugar free it usually has that in it......
i thought of koolaid...i will have to try it.

I would use the Knox with an all natural unsweetened fruit juice, rather than koolaid.
It won't likely be clear like regular jello but it will taste good!
Just use a juice with no added high fructose corn syrup, or other sweeteners.

Fri, October 26, 2007 - 3:03 PMOff the top of my head, something like Juicy Juice (though I realize there are probably better juices out there, that's just the first I can think of) which is 100% juice. I think there's also a new cranberry juice that has no added sweetener/sugar.

I've made jello like substance using unflavoured gelatin and fruit juice and it worked great. Just don't use raw pineapple juice, as the enzymes in it will cause the gelatin not to set.

Wed, October 17, 2007 - 7:56 PMI have made "jello" using knox gelatin, steviaextract, water and lemon juice...I kind of improvised a recipe using something from the box...you could use lime juice, or like someone else said, natural extracts of various flavors...

Wed, October 17, 2007 - 8:27 PMUnderstand about not wanting aspartame or splenda in your food. Found that aspartame was one of the triggers of my migraines. I also try to avoid high fructose corn syrup in my foods. But I accept that some sugar is ok, like the natural sweetness of fruit and so on. So I would go with the knox geletain and fruit juice.

& thought i would share
i used the unflavored gelatin ( i pk) and the koolaid 1/3 pk) with the stevia plus powder (tblspn & 1/2 )in with 2 yogurt & 8 oz fat free whip cream...
worked great!!!
( yogurt had splenda) Dooh!

Thu, November 1, 2007 - 9:39 PMi wanted to chime in with a suggestion to look into xylitol aka birch sugar as a sugar substitute.
it has the same consistency(is that the word im looking for?) as sugar, so you use it the same way you would use sugar. measurements and all.
xylitol comes from birch trees. and its good for your tooth enamel.
however its very toxic to pets so keep it away from them.
you can get it at health food stores in their vitamin and supplements departments usually.
