      <description>My coconut cake, forgot one thing, I left out eggs, take two, or use egg substitute, takes at leas a tablespoon or two to hold things doglegged. I have make it without ,but it really falls apart.&#xD;

&#xD;

&#xD;
Summer schedule: I am near Vegan,  and now gluten free. I do eat a small amount of dairy and and eggs sparingly, usually when eating out. Everyone is different, but I start my day, by taking my herbs and supplements, and then a small  glass of pineapple juice. Then a couple hours later maybe some fruit, or not. Lunch fruit or something solid, I let my body help to tell me what it wants.&#xD;
&#xD;
Simple foods I make, as I have autoimmune problems, fibromyalgia and etc problems and fatigue.  &#xD;
&#xD;
My favorite food, I have developed: Avocado quesadillas, heat up a pan, lay in a corn tortilla, put soy veggie cheese on, put sliced chunked avocado, then some green salsa, and heat on medium for around 2 1/2 minutes with the pan lid on. I use Veggie Shreds in the green bags, mozzarella cheese.&#xD;
&#xD;
Don't know if you have it locally, but I prefer Las Costena green salsa, has the best flavor to me.&#xD;
&#xD;
I eat mashed potatoes with the green salsa and natural margarine to taste, yum.&#xD;
&#xD;
I precook  brown rice and Quinoa together, like it better then each by itself. 2/3s rice, 1/3 Quinoa. I keep a pan of it in the frig to eat by itself or  put into other quickly and simply made foods I might throw in some rice mix,  precook of canned green beans or frozen peas and add some salsa and spice.&#xD;
&#xD;
I make my own version I guess of Mexican Tortilla soup. I throw in some low natural whole grain corn chips into a pan, smash up some, add water, salsa, can of red kidney beans, frozen peas and green salsa too. You could probably find better recipes.&#xD;
&#xD;
I often throw corn chips in a heat pan, with a lid, toss in some sliced olives, veggie shreds cheese, green salsa, pre cooked peas of green beans, some times refried beans and heat slowly and mix often. It is a mix of some thing between Chiliciles and super nachos.&#xD;
&#xD;
I use Costco natural whole grain corn chips, easier and quicker then browning and toasting fresh  corn tortillas; low in salt and oil.&#xD;
&#xD;
I find that rice, Quinoa, and corn is my staple.&#xD;
&#xD;
Eating out is not normally too difficult in this area, I usually find plenty to eat a  Chinese and Mexican restaurants, also at Golden Corral restaurants. Most restaurants serve  potatoes, rice, and vegetables, even stake houses.&#xD;
&#xD;
Desserts are not so easy, but there are soy and rice ice creams, but gluten free adds to the difficulty. I agree, most of the Rice and Etc  breads are like brinks, but from time to time, I do put a goodly amount of almond butter on a slice and add Agave syrup or some kind of jelly and mix together on the slice.&#xD;
&#xD;
I also have learned to make a fairly decent coconut cake from scratch. 1 1/4 cup brown rice flower, 1 cup or less of fine coconut, 3/4 to 1 cup of brown sugar, 1 tsp of soda, 1 tsp of natural none aluminum baking powder.    Add almond milk or etc fluid, 1/4 cup oil, vanilla, and mix to a cream state, then pour into a oiled or pam'ed 9 x 9 pan. Cook 30 to 40 minutes. This is my own developed recipe I developed, never got around to looking online for one, simply used originally what was in my home.&#xD;
&#xD;
You can always cook refried beans and use it in tacos, in place of meat and garnish as usual, change out real cheese for soy or nut cheese. It is I guess all about thinking outside of the box, same food one is used  to, just use replacements.&#xD;
&#xD;
I have been a near Vegan for a long time but finding I don't tolerate  Wheat and etc is new, and  I am still adjusting and looking for new things that are simple and appeal to me.&#xD;

      <description>don't stress about it. . .some people eat rice everyday. . .wait a minute. . .most of the people in the world eat rice every day.&#xD;
&#xD;
just take her shopping when she gets there. . .also, for a real special treat, you could do some research and find out if there is a vegan restaurant nearby. .</description>

      <description>why don't you ask her before she arrives?  My daughter has developed allergies since she moved out, too, and it's very hard for me to anticipate what she can eat vs. what she enjoys, and how far she can 'cheat' without the symptoms being too rough on her.  It's hard when I take the trouble to whip up one of her formerly favorite treats and then she won't or can't eat it.</description>

      <description>Besides rice and oats, there's quinoa,  spelt, teff, chickpea, lentil  and nut flours. &#xD;

A visit to your local health food store should help. They have people on staff who can help.  If you live in a metropolitan area, Whole Foods and Trader Joe's have gluten free breads and lots of vegan stuff.  My local grocery store carries rice flour pasta.</description>

      <description>I checked out some stuff at the store in the gluten free aslie but the bread is as hard as a rock and does not look very appitizung.&#xD;
I know rice is ok. What about kasha (buckwheat groats)?&#xD;
