Anyone have ideas to use up a bunch of overripe tomatoes? These are really nice heirlooms and I'd hate to throw them out. They're still edible (not moldy), but pretty squishy.

Sat, September 30, 2006 - 4:37 AMtomato sauce, salsa, tomato soup, add some to your rice cooker :), juice them, peel them and make a pot roast.
Blanch and freeze for a later day.

whenever i have veggies that aren't looking so hot I slice them, brush them with olive oil, throw some seasoning on them and put them in the oven at 425 for a while until they're crispy. -

Tue, October 3, 2006 - 10:27 AMI'd slow roast them... I really love slow-roasted tomatoes for their really intense flavor and sauciness.
You slice them about 3/4" thick, sprinkle a little salt, pepper, olive oil, and, if you like, a little bit of powdered sugar, whatever other seasonings/herbs you like, and bake them at 250 degrees for about 2 hours.
