looking for q/e camping foods

Going camping or hiking and looking for quick and easy foods to get ready. Normally, I bring granola (hemp, hooray for hemp!), for brekkie. Lunch I get a roll and put any combo of lettuce, tomoatoe, avocado or hummus., same for dinner if I'm not bringing cooking schutff.
Any other ideas?

    if it's cold at all, we get those Bear Creek powdered soups ( i think that's what the brand is, they're in a green zippy bag at most grocery stores) and a zip pack of something to put it. for example a zip pack or two of clams is great in their clam chowder, and all you have to do is add water and heat! the zip bags are much lighter than cans, and you can get chicken (for the tortilla soup, yummy!) and tuna (for snax with cheese and crackers) the same way.

    i suppose i should ask, is this car camping or backpacking? daypacking?

    i like to bring bacon. everyone loves it...excepting vegetarians of course, and even they like the smell of it! but when i don't want to make a huge mess, or have no stove, i bring jerky, salted nuts, chocolate, concentrated chai, fruits and pre-cut veges, tortilla chips...

    however, now that i am older and wiser, i usually camp in opulent style with a full camp kitchen, and make my camping trips specialler with fancy foods. i like to bring things that are dangerous (bacon) and sushi, or other such rare camping items. my next adventure in camp out cooking will be using a dutch oven by burying it with coals, letting the food slow cook through the day... like maybe tri tip stew or something like that.

    I like to mix a dried fruit mixture with pecans and salted peanuts. It makes a wonderful sweet and salty trail mix that hits the spot. Pre-cooked boneless bbq ribs are great for dinner if you have a cooler. Burritos are easy to prepare, need only one pan, or heat beans in the can in the fire.

    And there's always veggie dogs on a stick!

    If you have a camp kitchen those Indian Meals in a bag are great..just drop the whote bag in boiling water for 3 minutes and you are set. I think the brand name is taste-bite or similar. Have fun!

    Also for car camping with a cooler, you can pre-make california rolls and just eat em up! Yum!

      Mmm Tasty Bite. They are so good. You dont even need to heat them if you dont feel like it.

        I am going camping with a group of people and need to bring 3 different salads - enough to feed 12 of us.

        I was thinking of making Pasta Salad ahaad of the trip, maybe Tabbouleh and Southwestern Lentil Salad. I love the SW Lentil Salad at Whole Foods and found a recipe that may work - here it is

        Southwestern Lentil salad
        INGREDIENTS

        * 2 (15 ounce) cans black beans, rinsed and drained
        * 3 cups cooked lentils
        * 1 1/2 cups fresh or frozen corn
        * 1 cup chopped red onion
        * 1 cup chopped green pepper
        * 1/4 cup minced fresh cilantro or parsley
        * 1 cup vegetable oil
        * 1/2 cup cider vinegar
        * 1 tablespoon Dijon mustard
        * 1 1/2 teaspoons ground cumin
        * 1 clove garlic, minced
        * 1/2 teaspoon salt
        * 1/4 teaspoon pepper

          I love Tasty Bites! At Burning Man, I usually just put the foil package on top of a dark car in the morning, and let the sun warm it up.

            Good to carry foods: fruit (dried, fresh), hard boiled eggs, cheese, avocado, salami, bread/crackers, soup stock, nuts & seeds, lemon, salt and sugar to mix into water for electrolytes and added absorption when dealing with elevation changes, and over exertion. I trekked five months through Latin America on this diet. Enjoy!
  • I'm not sure if you have the means to cook, but if so here are some of the things I regularly make while camping:

    Breakfast Ideas-
    *Glomlettes: Chop of veggies at home before you leave like purple onion, zuchini, green peppers. Throw them into a plastic bag of a container. Also pre shred up some cheese, throw in another plastic bag. Heat up some olive oil in a pan, throw in the veggies for a few minutes. While veggies are cooking, beat up some eggs in a dish. Pour egg mixture into pan over veggies and scramble everything up. Towards the end, throw on some shredded cheese. Yum.
    *Bagles and Cream Cheese
    *Pancakes
    *Hashbrowns: Boil potatos either at home before you leave, or at camp before going to bed one night. Boil the taters whole and be careful not to overcook. You don't want them falling apart, just cooked enough that they are still firm and can hold their shape but are 80% cooked. Chop the cooked potatos up in the morning and throw in the skillet with some oil in the morning. Salt and Pepper them. You could also add in veggies like above for the glomlette and throw cheese on top if you dig that.
    *Cereal and milk or soy.

    Lunch Ideas-
    *Veg Sandwhiches with whatever you want, some of our favorites: Hummus, sprouts, avacado, cheeses, sunflower seeds, cucumber, tomato, cream cheese, goat cheese, pita pockets, naan bread, whole wheat bread.

    Dinner Ideas-
    *Indian food pouches like tasty bites, with some Naan bread. You can find the frozen Naan @ trader joes or some grocery stores have the kind in the refridgerator section. We like both.
    *Make a big pot of chilli: You can either go easy and just used canned chili or it's super easy to make your own. I use: A couple cans of whatever kinds of beans you like like kidney or black beans, or pinto. I usually buy a few different kinds. A couple cans of diced tomatos and a can or two of tomato sauce. First I saute some onion and green pepper, and garlic in a pot (pre cut from home and in a plastic bag).. Then I add in the cans of beans and tomato sauce and cut up tomatos. I add in plenty of salt, oregeno, garlic powder, pepper, and basil (all dried spices) to taste. Let that simmer for a little while maybe 10 - 30 minutes, it's all basically cooked so it's up to you on how long you want to ingredients to mingle for. Dish your chilli up into bowls and add tortilla chips or fritos, and cheese, sour cream, avacado. This is an awesome dish for a chilly night.
    *Gardenburgers or VeggieDogs - Super easy and you can add whatever condiments you like.
    *Rice and Beans Bowls - They have those dry packets of combined rice and beans in the rice and bean isle. They only cost under 3 bucks and it's so easy. Just add water, bring to a boil, then cook on the lowest flame possible with a lid on for 25 minutes. We love rice and beans! Alternatively you could make your own rice on one burner and then on a second burner you could heat up a can of beans and then mix them into the rice. You can add "fixings" to your rice and beans like shredded cheese, avacado, dash of lime, chips, onions, etc.
    *If you eat flesh, big fat T-Bone Steaks. I take Stubb's Marinade (YOu can find this with all the barbeque sauces). This brand is SO good. I take big ziplog bags and put the steaks into the marinade bags with the sauce BEFORE we leave to go camping. Throw them into the cooler when your ready to go. By the time you eat the steaks they have been in the marinade for so long and they are really really good. Makes me wish I still ate meat thinking about it, but not really. A good side dish is always potato salad. You could make it from scratch at home or purchase a bucket of it at the store.
    *Salmon. Take the fillets, or a whole or half salmon and place in some alluminum foil. Freely pour any kind of white wine over everything On top of the fillets place lemon, fresh or dried dill, salt and pepper, a few pats of butter perhaps. Wrap the samon up in the foil and place on a barbeque or a grate over the campfire until it's cooked. Cooked potatoes hashbrown style like I mentioned above are always great with salmon.
    *Kabobs: these can be veggie, or veggie and meat, anything goes. We use things like: Mushrooms, Green Peppers, Onion, Canned Potatoes (They need to be canned because the raw ones wont cook), tomatoes, shrimp, chicken, beef, lamb. I would marinate the the flesh before hand in something. You can find those easy marinade packets in the isle that has the packets for taco seasoning. You can chop all of the meat and veggies at home before you leave for your trip, and also marinade the meat before hand and put in ziplock bags.

    Snacks-
    *Smores: I think everyone should know what these are right?
    *Go down the dry bin isle of your grocery store and buy granola, trail mixes, candies etc.
    *Tortilla chips and bean dip or avacado dip, or salsa
    *Beer! Or fixings for Gin and Tonics with fresh lime!

    That's all I can think of for now....... Make sure you save your ziplock bags and wash them out and reuse them. Reduce, Reuse, Recycle.
