Quinoa recipes

So, I bought some at the end of last week, because I was curious about what it was like. And it's not what I thought it would be. (I didn't realize it would become "noodley" when cooked; thought it would stay somewhat "ricey.")

I'm seeking good recipes for how to use quinoa. In meals, as side dishes, whatever.

And, does it have to be cooked? Can you use it raw too, as long as you rinse it?

    I think you can sprout it and eat it raw. I'm not sure, I'm new at this healthy eating stuff, but I will keep an eye out

      Here is a healthy pancake recipe we've developed that we really love:
      Combine the following in a blender until fully mixed. Slowly add quinoa last. Add a little water if necessary to get the correct consistancy.
      1/2 cup (before grinding) finely ground raw quinoa
      1/2 cup cottage cheese
      1/4 cup plain yogurt
      1/4 cup chia gel
      3 large eggs
      1/2 tsp cinnamon
      1/4 tsp nutmeg
      1/4 to 1/2 tsp salt (to taste)
      1/2 tsp vanilla extract

          Annie, I made your quinoa pilaf last night. I added chopped green onions, tomatoes and cilantro and seasoned with curry, paprika, S&P. It was really yummy, but a litlte bit wetter than i'd wanted. I think I just need to let it sit longer after taking it off the heat. I added the tomatoes last so they were basically raw. I may cook them with the pilaf next time and reduce the liquid content a little bit. My partner went back for seconds - and it didn't even have bacon in it :-D

    Curried Quinua:

    1 chopped onion
    olive oil
    2 cloves garlic
    2 Tbs curry powder
    1/4 tsb cayenne
    1 tsp coriander
    1 cup Quinoa
    1 cup peas
    1 cup cashews
    2 cups water


    In a large pot (you want to have the pot be significantly larger than the amount of food you are going to cook, it allows the quinoa to stay fluffy as it spreads out, rather than being mushed together) put in the onion, garlic and oil. Saute for a few minutes, then stir in the curry, cayenne, and corriander. Spices can be adjusted to taste. Add cashews.

    Rinse quinoa a couple of charges, drain, then put into the pot with the onions and spices. Let the dry quinoa heat up until you can start to smell the grain (2 minutes?). Add peas, other vegitables if you want, and the 2 cups of water. Bring to a boil, reduce heat, and cover. Simmer while covered for 20 minutes, or until all the water is absorbed. Fluff with a fork. Eat and enjoy.

    I have been making Quinoa and Red Lentils as my grain for dinner recently. I cook 1 C each quinoa and red lentils in 5 C water (adding 3 tbsp each coconut oil and fish sauce or sometimes 1 or 2 cups of chicken stock instead of the fish sauce) and cook in my rice cooker. This yields me 5 1-cup servings of grains. I really like the combo, not counting the protien content!

    Here are the stats:
    Quinoa/Red Lentils 1 Cup 349.6 calories /11g fat /0mg cholesterol /883.2mg sodium /49.4g carbs /1.2g sugars /4.2g fiber /16.2g protien

      Quinoa Flakes are similar to Oatmeal
      not sure exactly what they are if they are the husks of the quinoa but they taste nice
      and cook rather quickly actually faster than oatmeal and has a more puree texture
      Make it just like Oatmeal
      I feel that it has a lot of protein like Quinoa seeds but not sure

        Hello!

        Quinoa flakes are the entire quinoa seed flaked. So it has the same nutritional profile as quinoa whole. Do keep it in the refrigerator or else in a dark cool place. They go rancid fast (1 year from manufacturing).

        I would recommend toasting them for a little bit before cooking. They should cook almost instantly

            i have a legend quinoa dish that i make its SO freaking easy!!

            i usually make my own sunflower seed/spinach pesto, but any pesto will do

            quinoa
            romano cheese (or any italian cheese)
            pesto
            lots of tomatoes (cut them up and put them in a pan with a load of balsamic vinegar and boil them until it reduces to about a quarter of the liquid)

            toss it all together. done. fantastic. people love it.

        I add quinoa flakes to my regular oatmeal - I just mix the dry flakes together & store them that way.
        I make oatmeal often enough that none of it goes bad.

        I store it in a lightproof oatmeal box on top of the fridge - if you store grains in a dark cupboard, you runt the risk of meal worms sprouting in the grains - yuk! They won't get started outside the cupboard - discovered this the hard way :0

        Then I make my oatmeal in the microwave... saves energy. (true)

        Before cooking, I add cardamon :P ... & sometimes also various berries, esp frozen wild blueberries from Trader Joe's (did you know wild blueberries have more anti-oxidants than acai? true!)

        When it comes out, I add: sliced banana / plain yogurt or ricotta cheese / maple syrup or a little bit of raw sugar...

      You can cook quinoa just like rice, only it seems to fluff up faster than rice. I do lots of satayed veggies, tofu, and rice, and I like to substitute quinoa for rice when I need more protein. It's a little fragile, so I don't usually leave it cooking in the pan as long.

    This past week I made my standard red beans & rice, but I still a had little bit of liquid in the pan – which my husband can't stand – so I threw in a little bit of quinoa. In my opinion, it blended in nicely. In his opinion he should never have to eat that stuff ever again.

    It's not a flavor issue, he has a problem with the texture. He doesn't think it blends in with anything. He's hard to cook for.

      Try it for breafkast...
      cook a batch up the night before and then take a serving of cold quinoa, some soy or almond milk and some frozen fruit, microwave until just warm...yummy!!!

        I would try that, but I'm pretty stuck in a routine of Cheerios for breakfast… which I totally love. Every now and then I grab a different box of cereal, thinking maybe I need a break from Cheerios. (notice that I don't say I WANT a break from Cheerios) And after a couple of days I'm already thinking "I wish I had Cheerios…"

        Of course, I'm usually eating the knock-offs. My local grocery sells a generic that matches the Cheerios nutrition panel point-for-point, unlike some generic Cheerios which have more salt, more sugar and less fiber.

      Ditto. My hubbo hates quinoa. I'm trying to lose some baby weight so I've been trying everything healthy but quinoa has not been received well. I must admit I'm not all that crazy about the texture either. Everyone says it's like rice or couscous but it seems like mush to me.

      Am I doing something wrong when I cook it, anyone?

    I make it just like rice, but replace half the water with italian dressing. (I usually mix up some of my own, but any good bottles stuff will work too.

    Its super tasty thay way with chicken.

    I make quinoa all the time, and it has never turned out noodley or mushy. I make it just like this:

    Basic quinoa (I make this when I want something plain to offset a spicy dish, or to mix with lots of sauteed veggies, or to have as a breakfast cerea).
    Bring 2 cups water to a boil. Salt, and add 1 cup quinoa. Return to a boil, cover, lower heat to simmer and cook 15 minutes. Turn off the heat and let it sit for 5 or 10 minutes, then fluff. The last bit of time lets it steam and really improves it.

    Quinoa pilaf
    Chop half an onion and saute in a bit of olive oil. Add some chopped garlic at the end. Stir in 1 cup quinoa and stir around for a minute or two to toast. Add 2 cups broth - chicken or veggie, either is fine. Return to boil, cover, lower heat to simmer and cook 15 minutes. Turn off the heat and let sit for 5 or 10 minutes, then fluff.

    IMHO, it's almost like a tiny barley in texture. I've never tried it raw.

      When I have the budget I use a 5/50 mix of quinoa and millet instead of rice. For everything. Sooo goood...

      Super quick and easy, just make up the salad parts while the grains are cooking. Yummy!

      Also, I put it in soups, chili, under curries, and they can be sprouted and used in raw dishes. They're a complete protein, too! How could you go wrong? :)

    I love this stuff. Follow the directions to cook (something like a cup of quinoa to a cup and a half of water) and simmer it until the quinoa can be easily fluffed. I often treat it like a pilaf to create a side alternative to grain and add whatever I think might taste good: chopped roasted red peppers, sliced kalamata olives, some minced garlic, bit of olive oil (not a lot), chopped artichoke hearts, you name it. It has a very subtle taste so takes to just about everything.

    A friend of mine made a really nice quinoa tabouli, just by substituting quinoa for the couscous. It blended very nicely with the other flavors... I don' t have the recipe, but tabouli recipes are pretty easy to come by.

      An important trick I learned in Peru: always cook quinoa UNCOVERED. It keeps it from getting mushy or bitter.

    Another great Quinoa option: Joe's Oat Patties. A guy local to my town makes them and distributes them, but his website is joesoatpatties.com/

    All you do is add hot water and you have a great dish. One of the mixtures is a Quinoa based one. It is so good! I tried it at a farmers market in town.

    And just one note: microwaving food destroys many enzyme and nutrients in the food. Even though it may be quick, it damages the structure of foods. Please don't microwave!

      I add Quinoa to my brown rice, before cooking, two cups rice, 1 cup of Quinoa, I like the texture and taste of the combination. It does take more water to cook Quinoa with rice, Quinoa is more thirsty then rice. I like to add it to other things, rather then by it self.

      Quinoa loves water, i have found that just like rice and Millet to some degree, you control the mushy effect or stickiness by the amount of water you add to it.

      Picking up on Sarah's note on Microwaves. The most recent University Study, which is not being sent out to the new media, Microwaves destroy all of the enzymes with a few seconds, and then work on other things after that. The researcher found plastic like compounds in the colons of those who used microwaves regularly, from the changes that Microwaves have on natural compounds in foods.

      Knowing they were bad anyway, we stopped their use after that bit of news, We discovered, food taste better cook normally, is more digestible, and we tend to eat less, since we stopped cooking food in our microwave.

    I use it with 3 bean salad.

    1/2 cup (red) quinoa
    1/2 can black beans
    1/2 can kidney beans
    1 can garbonzo beans
    1 tomato, diced
    1 avocado, diced
    1/4 cup diced red onion
    1 small can sliced olives
    fresh parsley to taste

    I dress the mixture with 50/50 flax oil and Italian dressing, salt & pepper and you're ready to go! (This is a Mexican~y version, you can switch out the olives, avocado & tomato for other veggies very easily.)

    I made sprouted quinoa last week for the first time, for a raw-food friend. Once it had sprouted (overnight) I added a little lemon juice and cold-pressed olive oil, and topped it with avocado and sriracha. It was pretty good, but personally I prefer mine cooked.
