My thing is cannellini with slow roasted cherry tomatoes and leeks. Besides soaking and cooking the beans, and cleaning the leeks, it's super easy. I either eat it with polenta or pasta-- or even by itself. I've decided I'm a big fan of slow roasting, especially with small tomatoes, because all I have to do is give them a rinse and a quick dry with a towel, stick them on a cookie sheet with some olive oil and salt & pepper, and cook them for about 2 hours at 250F. What could be easier? And, slow roasted leeks are not too much more complicated, though there are more steps to take to get the dirt out and to get them soft and wonderful than there are to the tomatoes.

Specifically, my favorite combination is spicy pork rinds and smoked jalapeno cream cheese. Oh. My. Goddess. YUM!!! Since I pretty much only eat low G.I. foods (unless I fall off the wagon with Cajun tater tots and ranch with beer, or some such thing), it's "legal" *and* feels very decadent. Mmmmm . . . -drain the pasta and put it in your serving bowl
-melt a bit of butter in the pan
-add your pine nuts and saute a bit

Those things are sooo yummy, AND healthy!!! oh and fast, right!
Got to sprout them but in the meantime you can sleep or anything else!
Oh, and why ohhh why...our friends vendors at the farmers market make this amazing apple cider, to die fooooor!

The "Ready To Eat" meals I get at the Indian Market in Dublin not far from me. I put it on white rice. Paneer Butter Masala. There are three I like ALOT. Have to get the names later. $1.50 each. INCREDIBLE taste! And believe it or not it it really is a filling and satisfying meal for under two dollars. -
