What Are You Really Into Right Now?

My thing is cannellini with slow roasted cherry tomatoes and leeks. Besides soaking and cooking the beans, and cleaning the leeks, it's super easy. I either eat it with polenta or pasta-- or even by itself. I've decided I'm a big fan of slow roasting, especially with small tomatoes, because all I have to do is give them a rinse and a quick dry with a towel, stick them on a cookie sheet with some olive oil and salt & pepper, and cook them for about 2 hours at 250F. What could be easier? And, slow roasted leeks are not too much more complicated, though there are more steps to take to get the dirt out and to get them soft and wonderful than there are to the tomatoes.

What are you into right now? I seem to go through phases with food and want to get inspired before I get too burnt out on this combination.

    Leafy greens. I get a Community Supported Agriculture box every 4 weeks, and they've been loading me up on kale, spinach, bok choy, etc. I sautee 'em and mix them with cous cous, quinoa, turkey sausage, whatever. Mmm.

    Manchego cheese and apples.

    Oven roasted cauliflower or brussels sprouts.

    Green beans with carmelized onions and garlic.

    Lentils with carmelized onions or whatever leftover veggies are in the fridge.

      veggie burritos....
      hummis, black beans, sliced tomato...
      cook in a big pan, yellow sqash, zuchinni, onion, garlic, green and red peppers




      that, or if i'm feeling real lazy, steamed veggies and rice....

        im so hungry!!! and I have a cold, i keep returning to the kitchen looking for something healthy, but everything is PROCESSED!!!
        Even the few vegetables we have are processed, fuckered up and ridiculously packaged,
        I am so freaking hungry, I feel ike I haven't gotten vitamins in weeks,
        and were all out of Green Tea!!!!
        (we have mothers milk for my ex-lactating mother)

        FUCK I'm toolazy to even write my favrote recipes, i am simple i guess
        I love tofu and teriyaki sauce I make it so bomb,
        and i love FLAX

        (you spray it on your food and its so good for your brain it makes ur food so yummy cuz it's so good for you!!!!)

    my husband makes this legendary limeade with limes, sugar, ice, water, mint and ginger
    then adds alcohol when he wants to kick it up.

        O.K., now - it's really bad for you, but *so* yummy! I've been chowing down on pork rinds dredged through cream cheese. Specifically, my favorite combination is spicy pork rinds and smoked jalapeno cream cheese. Oh. My. Goddess. YUM!!! Since I pretty much only eat low G.I. foods (unless I fall off the wagon with Cajun tater tots and ranch with beer, or some such thing), it's "legal" *and* feels very decadent. Mmmmm . . . Healthy, no. Lazy, hell yes! Fattening? Only if you're doing it wrong. ;o) ~ Misha

    Pasta with pesto and pignolas.

    -cook the pasta (I'm still on an orrecchiette kick, even if I can't spell it correctly)
    -drain the pasta and put it in your serving bowl
    -melt a bit of butter in the pan
    -add your pine nuts and saute a bit
    -add some garlic
    -add some pesto
    -add your pasta back in, toss to coat, and serve

      Also, fermented coconut milk(quite yogurt-like) with ground flax seeds and a little liquid stevia, sometimes I put a little raw cacao powder in there as well...now that I am reading this, I can see how this might not appeal to everyone, maybe no one except my weird self on my super self-imposed freakily restricted diet...

        Whole wheat toast with plenty of Newman's Creamy Caesar salad dressing topped with provolone.

        Lima beans cooked in cream with nutmeg. Mixed with brown rice, or straight out of the pot.

        Dark chocolate almonds- at least until I finished the ten pound bag yesterday. Sigh.

          Might sound weird at first but that's a winner, every time, sprouted lentils, I add them to all kinds of dishes, yes of course mostly salads, millet salad, quinoa salad (red quinoa salad oh my goshhhh!), etc etccccccc
          Those things are sooo yummy, AND healthy!!! oh and fast, right!
          Got to sprout them but in the meantime you can sleep or anything else!

          Oh, and why ohhh why...our friends vendors at the farmers market make this amazing apple cider, to die fooooor!
          HELP!
